My oil capacity is 5 quarts. Should I drain out 5 oz of oil before adding 5 oz of Sea Foam?

You do not need to drain any oil before adding Sea Foam. Oil crankcases have plenty of capacity for an “extra” 5 oz of liquid without causing any concern about overfilling.
5 oz is perfect for a 5 quart system.
